For installation to be correct, there MUST be an air gap of at least 3/4″ between the foil and any other material. I don't like the idea of seam allowances on a pot cozy. But that's just my aesthetic opinion. Non-wovens can be tricky to stitch, but as others have done it successfully I am sure it is possible.
